- Seafood balls
Inspired from the dodecanese gastronomy and the greek tradition, our recipes are based on the freshness and the seasonality of the ingredients. Our goal is not only to serve delicious plates to our visitors, but also to discover traditional recipes that have been forgotten. Every year our chef together with the Plefsis team search old wooden furniture to find dusty notes, interview villagers and read the existing bibliography in order to bring at your table the dodecanese treasures.
«Seafood balls» with squid and cuttlefish are a variation of the classic Greek recipe and own their existence to the history of Patmos, which mentions local fishermen exchanging all kinds of seafood and fish with Latins and Ottoman merchants. The recipe is easily cooked and ideally combined with tsipouro without anise.
Directions:
We slice the seafood (squid and cuttlefish) and place them in a colander for one night. As soon as our mixture stains well, we collect all the other ingredients and place them with the seafood. We stir well and fry in sunflower oil.
Ingredients:
- 5 pieces of cleaned cuttlefish
- 5 pieces of cleaned squid
- 3 tablespoons οf shredded toast bread
- 1 piece of grated dry onion
- 1 piece of garlic
- 3 tablespoons of olive oil
- ½ bunch of chopped parsley
- ½ bunch of chopped spearmint
- 1 teaspoon of oregano
- 1 teaspoon of oregano
- 250 ml red wine
- 2 tablespoons of vinegar
- Salt & pepper
